Cilantro and Lime Rice

I have always wanted to try making this easy cilantro and lime rice recipe because I love Chipotle’s lime cilantro rice. I adapted an easy rice recipe I found on Closet Cooking. It was simple to make and had little clean-up. My family loved the cilantro and subtle lime flavor and thought it paired nicely with grilled steak with avocado sauce and a Mexican wedge salad.

Cilantro and Lime Rice:

Ingredients:

  • 2 tsp butter or olive oil
  • ¼ yellow onion, minced
  • 2 cloves of garlic, minced
  • 1 cup long-grained white rice
  • 2 cups of water
  • 1 tsp chicken bouillon granules
  • 1 large handful of cilantro, chopped
  • Juice and zest of 1 lime

How to Make Cilantro and Lime Rice

Heat the butter in a large saucepan over medium heat. Add the onion and sauté for 5-7 minutes, until soft and tender.

Add the rice and garlic, then cook, stirring constantly, for 2-3 minutes.

Add the water and chicken bouillon granules, bring to a boil over high heat, stir and cover, then reduce the heat to low and cook for 20 minutes without disturbing or removing the lid. 

Remove from leaving undisturbed without removing the lid for 5 minutes.

Remove the lid, add cilantro, lime juice, and zest, and stir and fluff with a fork until well combined. Enjoy.

  1. mmmh. I am always a fan of a good rice. This looks perfect to use in a burriot. It reminds me of the rice they put in Chipotle Burritos.

  2. What a perfect side! I'd love this with just a bit of chicken in a wrap as a main dish too.

    Unfortunately, my son is one of those "cilantro tastes like soap" people, so I don't get to use it as much as a like.

  3. i am a rice lover and i love fried rice. i love the color green. pairing this with pork or chicken will make me gain weight… i want to try this. ^^

  4. Well, I've never been a big fan of cilantro (can't eat any food, incl. Mexican food, if cilantro is in it). But my daughter loves to cook with it, so I grow it in my herb garden. Your recipe for Cilantro and Lime Rice (we grow our own citrus, too), though, looks delicious. I'm going to give it a try!

  5. I really enjoy how fresh the rice is with the cilantro and lime. The chicken bouillon or cooking the rice in chicken broth would add a nice flavour as well!
