White Chocolate and Pecan Pumpkin Muffins

My kids had a day off from school for parent/teacher conferences, so we decided to make some pumpkin muffins. They wanted to add white chocolate, and I wanted to add pecans. They were simple and fun to make, and tasted wonderful! White chocolate and pumpkin pair well together! They devoured a couple for an afternoon snack, had another one for dessert after dinner, and finished them off with breakfast the following day. Needless to say, they were a HUGE hit!
White Chocolate and Pecan Pumpkin Muffins
Ingredients:
- 1⅔ cup flour
- 1 cup white sugar
- 1 tbsp pumpkin pie spice
- 1 tsp baking soda
- ¼ tsp salt
- ¼ tsp baking powder
- ½ cup unsalted butter, melted
- 2 eggs, room temperature
- 1 cup pumpkin puree *Not pumpkin pie filling
- 1 tsp vanilla
- ¾ cup white chocolate chips, divided
- ½ cup pecan pieces

How to Make White Chocolate and Pecan Pumpkin Muffins
Mix the flour, sugar, pumpkin pie spice, baking soda, salt, and baking powder in a bowl.
In a large bowl, combine the melted butter, eggs, pumpkin, and vanilla.
Slowly add the flour mixture to the wet ingredients until just incorporated.
Add most of the white chocolate chips (leaving a few to sprinkle on top of the muffins) and the pecan pieces and mix.
Spoon the batter evenly into the muffin tray.
Sprinkle each muffin top with a few white chocolate chips, then slightly push them into the batter.

Place in the oven and bake for 15-17 minutes, or until a tester inserted into the center comes out clean.
Cool on a wire cooling rack, then slather with butter and serve. Enjoy.
