Crab Quesadilla with Homemade Guacamole

I think my new favorite flavor combination is crab meat with avocado. I loved the cilantro and lime crab salad with avocado halves so much I decided to use the same flavors together to make a quesadilla for lunch the next day. I recently won a package of Tortilla Land corn tortillas from Two Peas and Their Pod,  and I couldn’t wait to use them. I precooked the tortillas, then layered them with Jack cheese, the crab mixture, followed by a bit more cheese. I loved the flavor combination of the crab mixture with the fresh corn tortillas and homemade guacamole. This quick, simple crab quesadilla was delicious and paired nicely with guacamole, salsa verde, and hot sauce.

Crab Quesadilla with Homemade Guacamole

Ingredients:

  • ½ cup lump crab meat
  • 1 tsp jalapeño, finely diced
  • 1 tsp red onion, finely diced
  • 2 tsp cilantro
  • Juice from ½ a lime
  • Sea salt and freshly cracked pepper, to taste
  • 2 fresh corn tortillas
  • Jack cheese, shredded

How to Make a Crab Quesadilla with Homemade Guacamole:

Side Note: If using par-cooked tortillas, cook them in a hot skillet for 60 seconds per side before preparing your quesadilla.

Combine the crab meat, jalapeño, red onion, cilantro, lime juice, sea salt, and freshly cracked pepper, and gently mix.

Heat a skillet over medium heat. Place a corn tortilla in the skillet, top with a bit of cheese, then add the crab mixture, followed by a little more shredded cheese.

Top with a second tortilla and cook for 3-4 minutes per side or until golden brown.

Remove from the skillet and let cool for a minute before slicing.

Serve immediately with guacamole, salsa verde, and hot sauce. Enjoy.
