Thai Chicken Salad

I recently had a delicious Asian salad at Panera that I loved so much that I decided to make a copycat Thai chicken salad recipe at home. I used mixed greens, leftover chicken, bell pepper, edamame, shredded carrot, cilantro, wonton strips, peanuts, and a spicy peanut vinaigrette from Trader Joe’s for this salad. I thought all of the flavors and textures were fantastic together– this easy Thai chicken salad recipe is definitely a new favorite!
Thai Chicken Salad
Ingredients:
- 2 cups mixed greens
- ½ cup roasted chicken, chopped
- 1 baby orange and 1 baby red bell pepper, chopped
- 2 tbsp edamame, shelled
- 2 tbsp carrot, shredded
- 2 tbsp fresh cilantro, chopped
- 2 tbsp wonton strips
- 2 tsp peanuts, chopped
- Spicy peanut vinaigrette, to taste

How to Make Thai Chicken Salad:
Combine the mixed greens, roasted chicken, bell pepper, edamame, carrot, cilantro, wonton strips, and peanuts.
Drizzle the spicy vinaigrette on top and toss until evenly coated.
Serve immediately. Enjoy.

I'm always trying to re-create stuff from Panera! I think I nailed their Asian Chicken Salad. This looks really good too. I often go into long 'Thai-food-streaks' at my house. Maybe someone can give me a hint what Edamama beans taste like – never had them and I'm curious. 🙂

Lovely salad. Love the colors!! I'm a thai peanut sauce junky. There is a local restaruant up here that serves bacon wrapped scallops w/ a thai peanut dipping sauce. I think I eat more sauce than anything. Happy Tuesday!!

Too funny, I am suppose to go to Panera tomorrow for lunch with my aunt. I pulled up the menu online because other than a bagel, have never eaten anything else they offer. I had picked the Thai salad! I know your is better!!!

What about the thai chili dressing . . . . that is the main dressing for this salad and the peanut dressing is just drizzled on. If you could re-create that recipe that would be great 🙂
