Pistachio Chicken Salad Sandwich

I was recently sent the Joy Bauer cookbook called Slim & Scrumptious, which I am really enjoying. I have so many recipes in it bookmarked, including this pistachio chicken salad sandwich recipe. I had leftover roasted chicken to use up, so I decided to try this sandwich for dinner. It took minutes to make and tasted wonderful–I loved the creamy chicken with the crunchy, salty pistachios, and the sweet roasted bell pepper. My kids thought it was just okay, but my husband and I both really, REALLY liked it and thought it paired nicely with baked sweet potato chips and fruit salad.
