 Asparagus and Shrimp Stir Fry

I found this Sunset recipe on MyRecipes that looked simple and delicious. I adapted it a bit by halving the sauce and by serving it with Garlic Rice instead of noodles. It was flavorful and hearty but still healthy. The shrimp were perfectly cooked and the sauce was tasty on the rice. I served this dish with Spicy Broccoli with Garlic for a quick and easy meal that the whole family enjoyed.

In a small bowl, mix together the chicken broth, soy sauce, cornstarch, and white pepper. Mix well with a whisk; set aside.

Set a skillet over high heat. When hot, add the vegetable oil, ginger, and garlic; stir until garlic begins to turn golden, about 30 seconds. Stir in asparagus and add 3 tablespoons of water; cover and cook just until asparagus is bright green, 1 to 2 minutes.

Add shrimp and stir, uncovered until they are opaque in the center of the thickest part, about 2 to 3 minutes.

Whisk the broth mixture then add it to the skillet; stir until the sauce boils and thickens. Taste and season if needed. Pour into a serving dish. Serve with Garlic Rice. Enjoy.

  • ¾ cup chicken broth

  • 1-2 cloves garlic minced
  • ½ pounds asparagus rinsed, woody ends removed, cut into thirds
  • ¾ lb shelled deveined shrimp, rinsed and patted dry
