Chocolate Chip Banana Bread

I recently saw a recipe on Healthy Food For Living for chocolate chip banana bread that looked delicious. I had three ripe bananas on the counter so I decided to make the bread for the kids after school snack. I adapted the recipe to suit my kids’ tastes. Needless to say, my house smelled amazing while the bread baked. The kids loved the bread and even had a second slice after dinner for their dessert. Simple and tasty – their kind of food.

How to Make Chocolate Chip Banana Bread

Preheat oven to 350 degrees. Coat a small loaf pan with cooking spray.

Whisk together the flours, baking soda, and salt together in a small bowl.

In a large mixing bowl, whisk together the mashed bananas, coconut oil, both sugars, egg, and vanilla extract until well combined.

Add dry ingredients to wet then stir until just combined. Fold in 3/4 cups of the chocolate chips. Pour the batter into the prepared loaf pan. Sprinkle the remaining chocolate chips evenly over the top of the loaf.

Bake for 50-60 minutes, or until a tester inserted into the center of the bread comes out clean. Remove from the oven and let sit in the pan for 10 minutes before turning out onto a wire rack to cool completely. Slice and serve with butter if desired. Enjoy.

Servings: 1 loaf

Ingredients

  • 1 cup of flour
  • ½ cup whole wheat flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 3 mashed overripe bananas
  • cup coconut oil melted
  • ½ cup white sugar
  • ¼ cup brown sugar packed
  • 1 large egg room temperature
  • 1 tsp vanilla extract
  • ¾ cup + 1-2 tbsp milk chocolate chips divided

Instructions
