Egg, Ham, and Extra Sharp Cheddar Breakfast Wrap
I was in the mood for something light for lunch, and after looking through the refrigerator, I settled on an egg, ham, and extra sharp cheddar breakfast wrap. This was a quick and easy lunch that I could eat on the go–perfect for busy days.
How to Make an Egg, Ham, and Extra Sharp Cheddar Breakfast Wrap
Heat a skillet coated with cooking spray over medium heat. Combine the eggs with some sea salt and freshly cracked pepper, to taste. Whisk until smooth.
Pour the egg mixture into the hot skillet. Slowly fold the egg mixture from the bottom of the pan to the top. This will keep the eggs from overcooking and the middle section will stay soft and fluffy. Do this constantly for 1 or 2 minutes, or until the eggs are just set.
Add the sliced ham, green onions, and grated cheddar then toss to warm everything. Do not overcook. Remove from heat.
Heat a flour tortilla in the microwave for 10-15 seconds, or until warm and pliable.
Spoon the egg and ham mixture down the center of the tortilla then roll. Serve immediately. Enjoy.

- 1-2 tbsp extra sharp cheddar grated
- 2 tsp green onions chopped
- 1 flour tortilla warmed
- Hot sauce if desired
