Pepperoni Pizza Potato Skins
I am making some Baked Potato Soup for dinner tonight so I decided to make some potato skins for my kids’ after-school snack today. I baked the potatoes then scooped out the potato filling. After baking the skins for a few minutes to crisp up, I filled them with some leftover marinara sauce then topped them with mozzarella cheese, mini pepperoni slices, and some parmesan cheese. I baked them until they were hot and the cheese was gooey. My kids loved these potato skins, even my son who doesn’t care too much for pizza, thought they were terrific. These pizza potato skins were a fun and tasty after-school snack that had my kids happy and smiling.
How to Make Pepperoni Pizza Potato Skins
Preheat the oven to 400 degrees. Rub the clean potatoes with a bit of olive oil then sprinkle them with salt evenly. Place into the oven and bake until tender, about 1 hour. Remove from the oven and let them cool. Slice in half lengthwise then scoop out the potato filling. Rub a bit more olive oil on the outside and inside of the potato halves then season with a bit more sea salt. Place them, skin side up, on the baking sheet and bake for 4-5 minutes or until crispy.
Remove from the oven and spoon in some marinara sauce then top with mozzarella cheese, mini pepperoni slices, and parmesan.
Place back into the oven and bake for 5-7 minutes or until the cheese is gooey. Remove from the oven and sprinkle the top with chopped parsley. Serve immediately. Enjoy.

I LOVE potato skins in any way, shape, or form, Pam! I even like them made into little pizzas and dare I say, I’m with your son when it comes to Pizza. I can leave it, lol…
GREAT idea though. I’m sure the kids were thrilled to come home to such a fun (and healthy) snack. I bet that Potato Soup was yummy too. I hope you’ll be sharing:) I’ll be pinning:)

What a great snack! When I was a kid I’d have finished off the batch, then come back for dinner. These days, the potato skins would be just enough for dinner! 😉 Really nice — thanks.
Your son is like me in not being overly fond of pizza! Hooray! I’m not the only oddball in the world! Your potato skin pizzas are inspired, Pam.
Sounds like a yummy after school treat. I love the idea of pizza topping in a potato skin.

I love the pizza infusion into these potato skins! I would probably be happy to eat them as a meal on their own.
Pizza potato skins? Genius! My family will love these!
Can you use red potatoes? Do you think that will matter?
Liz,
I think red potatoes would work very well! They will be smaller but just as tasty.
