Roasted Strawberries with Vanilla Bean

I recently made this roasted strawberries with vanilla bean recipe inspired by one from Ina Garten.  The berries smelled incredible while they roasted, and after sampling them, I couldn’t get over how much flavor the vanilla bean seeds added to the strawberries. We enjoyed a Sunday breakfast of twisted bacon, crispy hash browns, and waffles with these roasted strawberries.

Roasted Strawberries with Vanilla Bean

Ingredients:

  • 16 oz strawberries, hulls removed & sliced in half or thirds, depending on the size
  • 2-3 tbsp sugar, depending on the sweetness of the berries
  • 1 vanilla bean sliced down the center and seeds removed with a knife

How to Make Roasted Strawberries with Vanilla Bean

Preheat the oven to 400 degrees. Coat a 9 x 13 baking dish with cooking spray.

Place the strawberries in the prepared baking dish and toss with the sugar and vanilla bean seeds (click here to see instructions on seed removal).

Roasted Strawberries with Vanilla Bean

Place in the oven and roast for 20 minutes.

Cool to room temperature before serving.

Serve on yogurt, ice cream, pancakes, or waffles. Enjoy.
