Blackberry, Peach, and Plum Crisp

My kids asked for a fun dessert for after dinner tonight so I looked in the refrigerator to see what I had on hand to make. My friend Currié, who was over, suggested a blackberry crisp. I grabbed the blackberries along with two peaches and a couple of mini plums that were very ripe and ready to be eaten and made a couple of mini crisps for my kiddos. They smelled amazing while they baked and my kids absolutely LOVED them. These mini blackberry, peach, and plum crisps were a quick and easy way to put a smile on my kids’ faces and a great way to use up the extra ripe fruit.

How to Make a Mini Blackberry, Peach, and Plum Crisp

Preheat the oven to 350 degrees. Coat two mini baking dishes or ramekins with cooking spray.

Combine together in a large bowl, the blackberries, sliced peaches, and sliced plums. Add the sugar, lemon zest, vanilla, and cornstarch then stir to mix thoroughly. Pour into the two mini baking dishes or ramekins.

In another bowl, add the oatmeal, brown sugar, cinnamon, and butter together. Mix well with fingers until crumbly. Spoon onto the top of the fruit. Place on a baking sheet covered with tin foil (for easier clean up) and place into the oven to bake.

Bake for 30 minutes. Remove from the oven and serve as is or with whipped cream or ice cream. Enjoy.

Cook Time: 30 minutes 

Ingredients:

2 cups fresh blackberries
2 peaches, peeled & sliced
2 mini plums, sliced
2-3 tbsp sugar, more if fruit is tart
Zest from 1/2 lemon
1 tsp cornstarch

Topping:

1/2 cup old fashioned oats
2 tbsp brown sugar
1/2 tsp cinnamon
3 tbsp butter, softened, cut into bits
