Blackberry, Peach, and Plum Crisp
My kids asked for a fun after-dinner tonight dessert and after looking through the fridge, I made a mini blackberry, peach, and plum crisp recipe. These mini fruit crisps smelled amazing while baking and my kids LOVED them. These mini blackberry, peach, and plum crisps were a quick and easy way to put a smile on my kids’ faces and a great way to use the extra-ripe fruit.
Mini Blackberry, Peach, and Plum Crisp
Ingredients:
- 2 cups fresh blackberries
- 2 peaches, peeled & sliced
- 2 mini plums, sliced
- 2-3 tbsp sugar, more if the fruit is tart
- Zest from 1/2 lemon
- 1 tsp cornstarch
Topping:
- 1/2 cup old-fashioned oats
- 2 tbsp brown sugar
- 1/2 tsp cinnamon
- 3 tbsp butter, softened, cut into bits
How to Make a Mini Blackberry, Peach, and Plum Crisp
Preheat the oven to 350 degrees. Coat two mini baking dishes or ramekins with cooking spray.
In a large bowl, combine the blackberries, sliced peaches, and sliced plums and add the sugar, lemon zest, vanilla, and cornstarch, then gently stir to mix thoroughly.
Pour into the two mini baking dishes or ramekins.
Make the topping by combining the oatmeal, brown sugar, cinnamon, and butter; mix well with your fingers until crumbly.
Spoon evenly on top of the fruit.
Place on a baking sheet covered with parchment paper (for easier clean up) and place into the oven to bake for 30 minutes.
Remove from the oven and serve with whipped cream or ice cream, if desired. Enjoy.
