Buffalo Chicken Sliders
I made this easy buffalo chicken sliders recipe because I was lazy and didn’t want to go to the grocery store. After looking through the fridge & pantry, I found some dinner rolls, chicken breasts, blue cheese dressing, and hot sauce. These tasty homemade buffalo chicken sliders paired nicely with a garden salad and oven-baked sweet potato fries. It was a super quick and easy meal to throw together during the week and we all thought these sliders were tasty.
Buffalo Chicken Sliders
Ingredients:
- Olive oil cooking spray or a drizzle of olive oil
- 2 boneless skinless chicken breasts, cut in half lengthwise
- ¼ cup Franks Red Hot Sauce + more for serving, if desired
- 6 Slider or dinner rolls, toasted
- Mixed greens
- Blue cheese dressing
How to Make Buffalo Chicken Sliders
Cut the thin portion of the bottom couple of inches of the chicken breast off. Cut each remaining portion of the chicken breast in half lengthwise.
Place the 6 chicken pieces into a large zip lock bag and pour the hot sauce over the top. Seal and mix until the chicken is evenly coated with the hot sauce. Place into the refrigerator for 6-8 hours.
Once you are ready to eat, remove the chicken from the refrigerator 20 minutes before cooking it. Heat a large skillet over medium-high heat. Coat the skillet with cooking spray then add the chicken pieces to the HOT skillet, then season with sea salt and freshly cracked pepper, to taste, if desired. Cook for 3-4 minutes then flip over and cook for another 2-3 minutes, or until chicken is completely cooked through.
While the chicken is cooking, warm up the dinner rolls in the oven for a few minutes.
Place a piece of the lettuce on the bottom half of the dinner roll followed by a piece of chicken and a dollop of blue cheese dressing. Top with the remaining half of the dinner roll. Serve immediately with extra hot sauce on the side. Enjoy.

Great idea for an “I-really-don’t-want-to-cook” night! I made something similar the other night, but minus the buffalo sauce and plus a lot of cheese, but I made the rolls. It beat going out in the cold.
