Garden Salad

This salad is jam-packed with so many good things! I had a stocked refrigerator and had a hankering for a salad so I threw this one together. This delicious salad paired nicely with my very favorite–Fran’s Vinaigrette. We all thought it tasted fresh and delicious and my daughter especially loved the bites of mozzarella and sunflower seeds. I loved this salad so much I made a mini version for lunch the next day.

How to Make a Garden Salad

Make Fran’s Vinaigrette. Set aside for the flavors to mingle.

In a large serving bowl, add the mixed greens, tomatoes, bell pepper, broccoli florets, shredded carrot, cucumber, avocado, mozzarella balls, dried cranberries, and sunflower seeds. Drizzle the top with the vinaigrette, to taste, right before serving then toss until evenly coated. Serve immediately. Enjoy.

Ingredients:

Fran’s Vinaigrette – Click link above for recipe
4 cups mixed greens
1/2 cup grape tomatoes
1/4 cup orange bell pepper, sliced
1/4 cup broccoli florets
1/4 cup carrots, shredded
1/4 cup cucumber, diced
1/2 avocado, diced
1/4 cup mozzarella balls, halved
2 tbsp dried cranberries
2 tbsp toasted sunflower seeds

  1. A garden salad from our house would be sad this year. I think the only thing we have growing is tarragon and mint….yummy salad right? ha! Great looking salad, Pam!
