I was making a Southwestern flavored meal for dinner and wanted to pair it with a simple veggie side dish. I had a small onion, zucchini, grape tomatoes, garlic, cotija cheese, and cilantro in the refrigerator so I did a quick sauté and topped the veggies with the cheese and cilantro. It was a nice change of flavors that tasted nice together and it paired well with the rest of the meal.
How to Make Zucchini and Tomato Sauté with Cotija Cheese and Cilantro
Heat the olive oil in a skillet over medium heat. Add the onions and cook, stirring often, for 3 minutes. Add the tomatoes and cook, stirring occasionally for 2 minutes. Add the diced zucchini and cook, stirring occasionally, for 3-4 minutes, or until the zucchini is fork-tender and the tomatoes are close to bursting. Add the minced garlic and season with sea salt and freshly cracked pepper, to taste. Cook, stirring constantly, for 1 minute. Pour the veggies into a serving bowl then top with cotija cheese and fresh cilantro. Serve immediately.
