Chocolate Chews

For this week’s school lunch treat, my kids wanted chocolate cookies. I found a great recipe in Sunset Cookies Cookbook that sounded perfect. I baked them this afternoon and my whole house smelled amazing. My kids gobbled one up right away and both gave them a big thumbs up. My husband also tried one and thought they were rich, decadent, and delicious.

How to Make Chocolate Chews

Place the chocolate chips in a glass bowl then put them into the microwave for 30 seconds. Remove and stir then place back into the microwave for 20 seconds. Remove and stir then place back into the microwave for 10 seconds. Remove and stir until completely melted. If needed, continue cooking for 10-second increments. Be careful not to overcook the chocolate! Set aside.

Beat the butter and sugar together until creamy. Add vanilla followed by the eggs, one at a time, until well combined. Fold in the melted chocolate and mix well.

Combine the flour with baking powder, baking soda, and salt until mixed thoroughly. Gradually add the flour mixture to the butter mixture until combined. Cover with plastic wrap and place into the refrigerator for 30 minutes to harden a bit.

Preheat the oven to 350 degrees. Line a baking sheet with a silpat mat.

Place 1/4 cup of white sugar into a small bowl. Roll cookie dough into small 1″ balls then roll into the sugar to coat completely. Place onto the prepared baking sheet, about 2 inches apart.

Bake in the preheated oven for about 8-10 minutes, or until the cookies are dry around the edges and cracked on top. Let the cookies cool on the baking sheet for 10 minutes, then transfer to a rack to cool completely before serving. Serve with iced cold milk. Enjoy!

      Thank you! I corrected the recipe. You add it to the butter mixture after you beat in the vanilla and eggs.

  1. My boys love chocolate cookies, too. I recently made some with super-strong instant coffee added to them, and the little extra bit of flavor was fantastic. Of course, I was lazy and used cocoa powder instead of melting the chocolate chips. Yours look terrific, Pam.

    I make them with the whole bag of chips. I did it by mistake the first time now I do it on purpose. Outstanding!!!
