Cream Cheese Banana Nut Muffins

We had friends coming over in the afternoon and I wanted to make a light snack to serve. I had three very ripe bananas on my counter so I decided to make some muffins. I found this recipe on My Recipes for cream cheese banana nut muffins and I was very excited because I had all the ingredients on hand. I love that!! I kept to the recipe except for using half brown sugar & half white sugar, and I sprinkled the top of the muffins with some raw sugar to give the tops a crisper texture. I’ve never added cream cheese to muffins before so I was curious how they would turn out. The muffins were tender and moist on the inside and had such a wonderful banana flavor. These cream cheese banana nut muffins were a big hit with the kids and disappeared quickly.

How to Make Cream Cheese Banana Nut Muffins

Preheat the oven to 350 degrees. Coat a muffin tin with cooking spray or muffin liners.

Combine the flour with the baking powder, baking soda, and salt; mix until very well combined.

Beat the butter and cream cheese together with a hand mixer until creamy and smooth. Add the sugars and continue to beat with the hand mixer until light and fluffy. Add the egg and vanilla extract; mix well.

Gradually add the flour mixture to the banana mixture and stir with a rubber spatula, making sure to scrape the sides of the bowl, until just combined. Stir in the mashed banana and nuts.

Spoon the batter evenly in the muffin tin. Sprinkle the tops with a bit of raw or white sugar, if desired.

Place into the oven and bake for 23-25 minutes, or until a tester inserted in the center comes out clean. Cool in the pans for 10 minutes before moving them to a wire rack to continue cooling. Serve with ice-cold milk and butter, if desired. Enjoy.

  • 1 ½ cups of flour
  • ¼ tsp baking powder

  • 4 oz cream cheese softened
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • ½ tsp vanilla
  • ¾ cup ripe banana 2-3
  • ½ cup toasted pecans chopped
  • 1-2 tbsp raw or white sugar sprinkle on tops, (optional)

  1. I really like banana nut bread and assume these would be similar but better with the cream cheese in them – passing this on to the family baker.
