I have been trying to incorporate more meatless dishes during the week. It not only saves my family money, it is also good for us. Sometimes our meals will be breakfast for dinner, pasta dishes, or tacos. Mushrooms and eggs are both excellent options to make vegetarian meals a little more hearty.
