Sweet Cherry Almond Bars

My local grocery store had a terrific sale on cherries recently so I grabbed a bunch. After getting our fill of fresh cherries, I chopped some of them up and make these sweet cherry almond bars from a recipe I found The View From Great Island. The crust is buttery and full of almond flavor and the cherries were sweet and delicious. My kids both loved these cherry almond bars and so did my husband and I.

How to Make Sweet Cherry Almond Bars

Preheat the oven to 350 degrees. Line an 8×8 baking dish with a bit of parchment paper, if desired. Lightly spray the baking dish and parchment with cooking spray.

Combine the cherries, sugar, cornstarch, lemon juice, and almond extract in a bowl; mix well and set aside.

Pour the flour, almond flour, sugar, baking powder, and salt together in the bowl of a food processor; pulse until well combined. Add the chopped butter, egg yolk, and almond extract; pulse until the dough is crumbly.

Press 2/3 of the dough in the bottom of the prepared baking dish to form the crust. Top with the cherries and their juices. Crumble the remaining dough evenly over the cherries then top with thinly sliced almonds.

Place into the oven and bake until golden brown and bubbling, about 35-40 minutes, turning the dish halfway through baking. Remove from the oven and allow to cool on a wire rack until cooled. Cut and serve. Enjoy.

Ingredients

Cherries:

  • 2 ½ cups sweet cherries, pitted, halved & roughly chopped
  • 2 tbsp white sugar
  • Juice from 1/2 small lemon
  • ½ tsp almond extract

Shortbread Crust & Topping:

  • 1 cup flour
  • ¼ cup almond flour
  • ½ cup white sugar
  • ½ tsp baking powder
  • Pinch of salt
  • ½ cup unsalted butter, cut into small pieces
  • 1 egg yolk
  • 1 tsp almond extract
  • ¼ cup thinly sliced almonds
