Apple Cinnamon Cookies with Maple Glaze

These apple cinnamon cookies with maple glaze are the perfect fall cookie and I was thrilled when I found this recipe on Nourish and Fete. Even though my kids are having to do school online from home right now, I decided to maintain our yearly tradition of making them a special treat on their first day of school–10th & 12th grade this year! Seriously, time is flying by way too quickly and it seems like yesterday they were just starting grade school. Sigh. Both of my kids finished their online classes and enjoyed a couple of these cookies warm from the oven. They both deemed these apple cinnamon cookies with maple glaze really delicious and most definitely blog-worthy! I love that they will never be too old for an after school treat.

How to Make Apple Cinnamon Cookies with Maple Glaze

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.

Using an electric hand mixer, cream together the brown sugar and butter until light and fluffy. Add the egg and vanilla and mix until combined, making sure to scrape down the sides of the bowl.

In a separate bowl, combine the flour, oats, cinnamon, baking soda, cloves, salt, and nutmeg together until well combined.

Gradually add the oat mixture to the butter mixture until combined.

Sprinkle the lemon juice over the diced apples and toss to evenly coat them. Add the apples to the cookie dough and stir gently to combine.

Use a cookie scoop or spoon dough into rounds of about 2 tablespoons each, place a few inches apart on the prepared baking sheet.

Bake for 11-13 minutes, or until the tops are set and the edges are lightly golden. Remove from the oven and cool on the baking sheet for a few minutes before transferring them to a wire rack to cool.

How to Make the Maple Glaze

Make the maple glaze by combining the powdered sugar, maple syrup, and milk together until creamy and smooth.

Place the wire rack of cookies over a piece of parchment paper and drizzle the maple glaze over each cookie. Serve and enjoy.

Store cookies in an airtight container in the refrigerator for up to a week.

Ingredients

Apple Cinnamon Cookies:

  • ¾ cup brown sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¼ cups flour
  • 1 ¼ cups rolled oats
  • 1 tsp ground cinnamon
  • ½ tsp baking soda
  • ¼ tsp cloves
  • ¼ tsp salt
  • tsp nutmeg
  • 1 cup apple, peeled & finely chopped to 1/4-inch cubes *Don't add more than 1 level cup
  • 2 tsp fresh lemon juice

Maple Glaze:

  • cup powdered sugar
  • 2 tsp real maple syrup
  • 2 tsp milk
