Italian Salad
I love salads and make them several times a week. I was craving something different from our usual house salad. I looked through the refrigerator and found some kalamata olives and salami along with pine nuts and fresh Parmesan cheese. I used a simple homemade vinaigrette and was so happy with the end result. It was full of flavor and very tasty – my children (and husband) gobbled it up!
Italian Salad:
Ingredients:
- Romaine lettuce
- Fresh baby spinach
- 1 handful of cherry tomatoes
- 1 handful of kalamata olives
- 5-6 slices of salami, quartered
- 1/4 fresh red onion sliced thinly
- Toasted pine nuts
- Fresh Parmesan cheese
- Frans Simple Vinaigrette
Add the pine nuts to a dry skillet over medium heat. Cook stirring frequently until golden brown, remove from heat and let cool.
Mix the romaine and spinach and add the tomatoes, olives, onions, pine nuts and Parmesan cheese, top with Fran’s vinaigrette, toss and serve. Enjoy!
Oh, you’ve done it now! This is such a great salad. I’ve always called this an “Italian chopped salad” … and it’s my absolute favorite. Throw in some chick peas and it’s a complete meal. YUM!
Oh, I could soooo go for this rigth now! It looks d-lish! What a salad!
Anything with pine nuts in and Im won over. This sounds fantastic
Pam,
This sounds delicious!
Do you use a seasoned or an unseasoned rice vinegar for your dressing? Also, this looks like it would be good with a champagne or cider vinegar too, great recipe!
I don’t care if you live on the other side of the country….I’m coming to your house for dinner!
Your salad sounds so packed full of flavor and fresh. I’m craving your salad right now.
Looks delicious. I haven’t had salami in forever, but the mix of salty and sweet you have sounds great 🙂

Jason,
I use seasoned rice vinegar (I just fixed it in the post) but I am sure champagne or cider vinegar would work great too.

Anyway, on topic. That looks nice, might suggest it instead of our family’s usual lettuce-tomato-cucumber salads. Mmm.
