Egg & Avocado Open Faced Sandwich

I wanted a healthy breakfast to start the day off right and to give me some extra energy for my workout at the gym so I made this egg & avocado open faced sandwich and it was SO DELICIOUS! It was filling without being heavy and the sandwich paired nicely with the fresh berries. This was a healthy and satisfying breakfast that I will probably have again tomorrow.

How to Make an Egg & Avocado Open-Faced Sandwich

Prepare the hard-boiled eggs. Click here for instructions.

Toast a piece of leftover French bread or toast of your choice in a toaster.

Spread some mashed avocado over the toast. Peel the hard-boiled egg then slice. Add the slices of the egg to the top of the avocado. Season with sea salt, freshly cracked pepper, and cayenne pepper, to taste. Serve immediately. Enjoy.

    What a GREAT quick breakfast before a workout. Quick because I usually have hard boiled eggs in the fridge for Marion:) I may just give this a try although, I think I will omit the yolks and just go with the whites.
