Coconut, White Chocolate, and Chocolate Chunk Cookies

My dear friend’s stepson graduated from high school last spring. For his present, I gave him a coupon good for a few care packages sent throughout his first year of college. I recently sent him his first care package filled with magazines, snacks, and these cookies. He loves chocolate and coconut, so I combined white chocolate chips, semi-sweet chocolate chunks, and shredded coconut to make these moist and delicious cookies. I have a feeling these will be a big hit with the college guy and his roommate.
Coconut, White Chocolate, and Chocolate Chunk Cookies
Ingredients:
- ½ cup softened butter
- ½ cup white sugar
- ¾ cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 2¼ cups flour
- 1 tsp baking soda
- ½ tsp salt
- 1½ cups of flaked coconut (divided)
- 1 cup of white chocolate chips
- ½ cup semi-sweet chocolate chunks

How to Make Coconut, White Chocolate, and Chocolate Chunk Cookies:
Preheat the oven to 375 degrees. Spray a baking sheet with cooking spray or line it with parchment paper.
Beat the butter, white sugar, and brown sugar until creamy and smooth using a hand mixer or stand mixer.
Slowly beat in the eggs and vanilla.
In another bowl, mix the flour, baking soda, and salt thoroughly.
Slowly add the flour mixture to the egg mixture until well blended.
Add 1 cup of coconut, white chocolate chips, and the chocolate chunks, then gently mix.
Drop by rounded spoonfuls onto the baking sheet.
Sprinkle the top of each cookie equally with the remaining coconut.
Bake for 8-10 minutes or until golden brown.
Cool before moving them to a wire cooling rack. Enjoy.
