Greek Salad Skewers
We had some pretty warm weather recently which usually means I don’t want to heat up the house by cooking dinner. I looked through the fridge for some ideas and found some feta cheese, fresh herbs, cucumber, onion, and olives along with some fresh cherry tomatoes & some lemons on the counter so I decided to make some Greek salad skewers. I marinated the feta chunks in some olive oil, garlic, fresh herbs, and seasonings for about 15-20 minutes prior to making the skewers. I soaked my red onion in some ice water to mellow the flavor a bit because they were so strong but other than that there wasn’t much prep work. I assembled the skewers right before serving and they disappeared quickly. They tasted fresh, tangy, and delicious – we all loved them.
How to Make Greek Salad Skewers
Marinate the feta by combining olive oil, lemon juice, dill, parsley, minced garlic, sea salt, and freshly cracked pepper to taste. Mix well then add the feta cubes and gently toss to coat. Set aside to allow flavors to mingle.
If your red onion is very strongly flavored, place cut pieces in a bowl of ice water for 15 minutes then drain well on paper towels.
Assemble the Greek salad skewers by layering the cherry tomatoes, red onion, cucumber, olives, and marinated feta on small wooden skewers. Place on a serving plate. Serve and enjoy.

Marinated Feta:
- 3 tbsp good olive oil
- 1 tbsp fresh lemon juice
- ½ tbsp fresh dill, chopped
- ½ tbsp fresh parsley, chopped
- 1 clove of garlic, minced
- Sea salt and freshly cracked pepper, to taste
- Block feta, diced into 8 bite-sized pieces
Skewers:
- ¼ red onion, cut into 8 bite-sized pieces
- 8 cherry tomatoes
- ¼ English cucumber, peeled, halved Lengthwise & sliced
- 8 kalamata olives
Instructions
