Cabbage and Bacon with Buttery Noodles

A comforting combination of pan-fried bacon, cabbage, onion, and egg noodles, all deliciously caramelized in plenty of butter.

Also called Haluski, this fried cabbage and bacon with buttery egg noodles is a Polish-American comfort food. I had half a green cabbage leftover in the fridge and decided to give this cabbage dish from Polish Feast a try. This hearty, easy green cabbage recipe was a breeze to make, tasted comforting and delicious, and paired nicely with a simple salad tossed in a tangy lemon vinaigrette.

Cabbage and Bacon with Buttery Noodles

Ingredients:

  • 3 slices of bacon
  • ½ yellow onion, chopped
  • ½ green cabbage, core removed, and chopped
  • 2 cloves of garlic, minced
  • Sea salt and freshly cracked black pepper to taste
  • 6 oz wide egg noodles, cooked al dente, according to the package instructions
  • 1½-2 tbsp butter, to taste

How to Make Cabbage and Bacon with Buttery Noodles:

Cook the bacon in a large skillet over medium heat until browned & crispy. Remove to a paper towel to drain. Chop into bits.

Remove all but 1 tablespoon of bacon grease from the large skillet and add the onion. Season with a bit of sea salt and freshly cracked black pepper to taste and cook, stirring often, for 4-5 minutes.

Add the chopped cabbage to the skillet and stir to combine. Season with a bit of sea salt and freshly cracked black pepper to taste and cook, stirring often, for 15-20 minutes, until very tender and starting to caramelize.

Meanwhile, cook the egg noodles to al dente in a large saucepan of well-salted boiling water, according to the package instructions. Drain the noodles well, add 1 tablespoon of butter, and toss to coat well.

Pour the buttery noodles into the large skillet with the cabbage, and stir in the remaining butter. Stir in the bacon and taste. Re-season if needed.

Serve immediately and enjoy.
