Loaded Roasted Cauliflower
Tender and caramelized roasted cauliflower loaded with crisp bacon, green onions, sharp cheddar cheese, and topped with a drizzle of ranch.
What an awesome side dish this is! I made this loaded roasted cauliflower because I had some cauliflower that needed to be used up. I decided to make it extra special by loading it up with toppings. After looking around, I found some leftover bacon in the fridge along with some sharp cheddar, green onions, and some ranch dressing. The cauliflower was roasted and ready to eat within 30 minutes and this delicious side dish was super easy to throw together.
How to Make Loaded Roasted Cauliflower
Preheat the oven to 400 degrees.
Drizzle the cauliflower slices with olive oil, sea salt, and freshly cracked black pepper, to taste. Gently toss to coat evenly. Spread the cauliflower out over the baking sheet.
Roast in the oven for 10-12 minutes, or until golden brown. Carefully flip the cauliflower pieces over and continue to roast for another 5 minutes, or until golden brown and tender.
Remove from the oven and sprinkle the top with shredded cheese and some bacon bits. Return to the oven for 3 minutes, or until the cheese is melted. Remove from the oven and top with sliced green onions and a drizzle of ranch dressing. Serve immediately. Enjoy.

- 1-2 tbsp olive oil, to taste
- ½ head of cauliflower, florets sliced

- 3 tbsp bacon bits
- 2 green onions. sliced
- Ranch dressing, to taste

I’m not normally a fan of roasted veggies (except potatoes) but I believe I could go for this one – it looks very good.
