Roasted Broccoli and Bacon Salad
Roasted broccoli and bacon salad with crisp-tender broccoli, salty bacon, tender shallots, crunchy sourdough croutons, and creamy feta cheese all tossed in lemon juice and garlic. Full of flavor and satisfying textures, this salad is sure to satisfy.
I’ve had this roasted broccoli and bacon salad recipe on Pinch of Yum bookmarked for a while and finally made it. I can’t believe it took me so long! I loved the combination of flavors & textures and enjoyed the zing from the fresh lemon juice and grated garlic. This was a different and tasty salad and a new & easy recipe for broccoli.
Roasted Broccoli and Bacon Salad
Ingredients:
- 3 cups broccoli florets
- 2 tbsp olive oil, divided
- Sea salt and freshly cracked pepper, to taste
- 3 slices of bacon, cut into bite-sized pieces
- 1 large shallot, sliced
- 3 slices of sourdough bread, cut into cubes
- Juice and zest from 1 lemon
- 1 clove of garlic, finely grated
- 2-3 tbsp feta cheese crumbles, to taste
How to Make a Roasted Broccoli and Bacon Salad
Preheat the oven to 425 degrees. Coat a baking sheet with olive oil cooking spray.
Season the broccoli florets with 1 tablespoon of olive oil and sea salt and freshly cracked pepper, to taste; toss to coat evenly. Pour and spread out onto one side of a baking sheet.
Place the bacon pieces on the other side of the baking sheet. Top the baking with the sliced shallot.
Place into the oven to roast for 10 minutes then gently toss everything and continue to roast for another 5-10 minutes, or until the broccoli is crisp-tender, the bacon is crisp, and the shallot is tender. Remove from the oven and set the broccoli in a bowl with the bacon and shallots.
Turn the oven down to 375 degrees.
Toss the sourdough bread cubes in the bacon grease on the baking sheet and season with sea salt and freshly cracked pepper, to taste.
Place into the oven to bake for 10-13 minutes, stirring halfway through baking time, until crispy and golden brown. Remove from the oven and add to bowl with the broccoli and bacon.
Drizzle with the remaining tablespoon of olive oil, fresh lemon juice, zest, and grated garlic, and season with sea salt and freshly cracked pepper, to taste; toss to coat evenly. Add the feta cheese and serve immediately. Enjoy.
