Sheet Pan Roasted Potatoes and Green Beans
Sheet pan roasted potatoes and green beans loaded with onions and bacon makes an easy & tasty addition to your dinner table.
I was making some roasted chicken for dinner and wanted to pair it with an easy side dish and a simple salad. I grabbed some baby potatoes, green beans, bacon, and half an onion from the fridge and roasted them on a sheet pan together. The veggies were super flavorful thanks to the bacon, the potatoes were crispy on the outside and creamy inside, and the green beans were tender and so tasty.
How to Make Sheet Pan Roasted Potatoes and Green Beans
Preheat the oven to 400 degrees.
Parboil the whole baby potatoes in boiling water for 6 minutes. Remove from the water and drain very well on a towel. Slice each baby potato in half once they have cooled.
Drizzle the potatoes, green beans, and onion slices with olive oil and season with sea salt, and freshly cracked black pepper, to taste, on a baking sheet; toss until evenly coated. Remove the green beans to a plate; set aside until needed.
Arrange the potatoes cut side down in an even layer and not touching each other. Sprinkle onion slices and bacon pieces around the potatoes.
Place into the oven and roast for 15 minutes. Carefully flip the potatoes over and add the green beans around the other veggies then continue to roast for another 10-15 minutes, or until the potatoes are golden brown and the green beans are tender.
Add the minced garlic and toss to coat the veggies then return to the oven for 1-2 minutes.
Remove from the oven and serve immediately. Enjoy.

- ½ small yellow onion, sliced
- Sea salt and freshly cracked pepper, to taste
- 2 slices of bacon, cut into large bits
- 1 clove of garlic, minced
