Black Bean, Green Chile and Sharp Cheddar Baked Flautas
Okay, so I love Mexican food – can you tell? I was going to make chicken-baked flautas but I got very lazy and decided black bean and green chile would work great. They were extremely easy to make and only took 15-20 minutes to cook. I love this kind of dinner – especially when I don’t feel like cooking. I served these baked flautas with fresh guacamole and homemade salsa. They were crispy without being greasy. My husband and I really loved them but both kids wanted plain bean and cheese burritos – their loss.
Black Bean, Green Chile, and Sharp Cheddar Baked Flautas:
Ingredients:
- 1 small can of whole green chiles
- 1 can of black beans, rinsed and drained
- Extra sharp cheddar cheese, shredded
- Small flour tortillas
- Fresh cilantro, chopped
- Guacamole
- Salsa
How to Make Black Bean, Green Chile and Sharp Cheddar Baked Flautas
Preheat the oven to 350 degrees. Coat a baking sheet with cooking spray.
Place shredded cheese on the center of the tortilla, add some beans, half of the green chile, and some chopped cilantro. Roll tightly and set seam side down on the baking sheet. Once they are all rolled, spray the top of each flauta with olive oil cooking spray.
Bake for 10 minutes then flip and bake for an additional 10 minutes, or until golden brown and crispy. Enjoy.
