Mediterranean Pizza
I needed to use up some ingredients in my refrigerator but I didn’t feel like cooking so what’s a girl to do? Make pizza. Using store-bought dough and sauce makes this really feel like I am not cooking. I threw some leftover baby spinach, kalamata olives, black olives, sun-dried tomato, feta cheese, red onions, and garlic on this pizza. It turned out delicious – my husband and I both really loved it and so did the kids.
Mediterranean Pizza:
Ingredients:
- Cooking spray
- Cornmeal
- Pizza dough (store-bought or homemade)
- Pizza sauce
- Mozzarella cheese
- Baby spinach
- Kalamata olives, sliced
- Black olives, sliced
- Sun-dried tomato
- Feta cheese
- Red onion, sliced thinly
- 1 clove of garlic minced
- Dash of oregano
How to Make a Mediterranean Pizza
Preheat the oven to 425 degrees.
Spread dough on a pizza sheet that has been coated with cooking spray and a sprinkle of cornmeal. Spoon the sauce on the dough and spread evenly.
Sprinkle the mozzarella cheese all over followed by spinach, kalamata olives, black olives, sun-dried tomato, feta cheese, red onion, minced garlic, and a dash of oregano.

This looks yummy. I always keep a jar of marinated artichokes in the refrigerator just to slice up and throw on top of pizza. I never thought of adding fresh spinach, though.
Can I ask where you buy your pizza sauce from? My husband loves homemade pizza, but we’ve never really found a pizza sauce that he likes; so I just use a simple marinara and it just isn’t the same!

I get pizza sauce from Trader Joe’s and it’s really good but I also like to make my own or use leftover marinara.
