Broccoli with Garlic, Pine Nuts, and Asiago Cheese

I am always trying new ways to make broccoli in hopes that my kids will finally enjoy eating it. I made this broccoli with garlic, pine nuts, and asiago cheese recipe to pair with some crispy chicken parmesan, spaghetti with mizithra & browned butter, and some crusty bread I was serving for dinner. My daughter didn’t care for the cheese, my son thought it was pretty good, and my husband and I thought this easy broccoli side dish was delicious and paired nicely with the rest of the meal.
Broccoli with Garlic, Pine Nuts, and Asiago Cheese
Ingredients:
- 1 tbsp olive oil
- 1 small head of broccoli, cut into florets
- 1 clove of garlic, minced
- Sea salt and freshly cracked pepper, to taste
- Dash of crushed red pepper
- 2 tbsp of toasted pine nuts
- Asiago cheese, grated, to taste
- Lemon wedges

How to Make Broccoli with Garlic, Pine Nuts, and Asiago Cheese:
Heat the olive oil in a large skillet over medium heat.
Add the broccoli florets and cook, stirring often, until lightly browned, about 4-5 minutes, until they are still a bit crisp, fork-tender, and bright green.
Add the minced garlic, and cook, stirring constantly, for 1 minute.
Remove from the heat and place in a serving bowl.
Toss in the toasted pine nuts and asiago cheese.
Serve immediately with lemon wedges. Enjoy.
