Caramelized Onion Scrambled Eggs

The second recipe I made for Cookbook Week* was this easy caramelized onion scrambled eggs recipe from Frugavor by Arabella Forge–How to grow organic, buy local, waste nothing, and eat well. This book is filled with gardening, shopping, cooking tips, and recipes. I looked at it early in the morning while drinking coffee, and once I saw the recipe for caramelized onion scrambled eggs, I couldn’t get it out of my mind. By the end of the book, I was craving some eggs. The recipe was simple to do, but it took a little extra time to caramelize the onions–it was totally worth it! My husband and I both thought the eggs were delicious and paired nicely with buttered toast, twisted bacon, and crispy hash browns.

Caramelized Onion Scrambled Eggs

Ingredients:

  • 1½ tbsp of butter, divided
  • ½ yellow onion, diced
  • 4 eggs
  • 1 tbsp milk
  • Sea salt and freshly cracked pepper, to taste
  • Chives, chopped for garnish

How to Make Caramelized Onion Scrambled Eggs:

Heat 1 tablespoon of butter in a large skillet over medium heat. Add the onions and cook, stirring often, for 20-25 minutes, or until golden brown and lightly caramelized. While the onion cooks, whisk the eggs together with the milk, sea salt, and freshly cracked pepper to taste.

Once the onion is cooked, remove it from the skillet and transfer it to the bowl with the well-whisked eggs.

Wipe the skillet clean and add the remaining butter over medium heat.

Pour in the egg and onion mixture. Constantly fold the egg mixture from the bottom of the pan to the top. This will keep it from overcooking, and the middle section will stay soft and fluffy. Do this constantly for 1 or 2 minutes, or until the eggs are cooked to your liking.

Sprinkle with chives and serve immediately. Enjoy.

  1. Just made this for breakfast (minus the garnish) and it was really tasty! I’m normally not a fan of scrambled eggs but the onion really added a lot of flavor to the eggs. I will totally make this again!
