The second recipe I made for Cookbook Week* was from Frugavor by Arabella Forge. How to grow organic, buy local, waste nothing, and eat well. This book is filled with gardening, shopping, cooking tips, and recipes. I looked at it early in the morning while drinking coffee and once I saw the recipe for caramelized onion scrambled eggs I couldn’t get it out of my mind. By the end of the book I was craving some eggs. The recipe was simple to do but it took a little extra time to caramelize the onions – it was totally worth it! My husband and I both thought the eggs were delicious. I served these eggs with buttered toast. Thank you Arabella for the great cookbook!
*Cookbook Week: I was recently sent 5 wonderful cookbooks (food blogger perks) so I decided to do a recipe from each book this week – October 10-14, 2011 – (First recipe).Caramelized Onion Scrambled Eggs: Adapted recipe and photos by For the Love of Cooking.net Original recipe by Frugavor ~ Arabella Forge
- 1/2-1 tbsp of butter
- 1/2 sweet yellow onion, diced
- 4 eggs
- 1 tbsp milk
- Sea salt and freshly cracked pepper, to taste
- Chives, chopped for garnish
Heat the butter in a skillet over medium heat. Add the onions and cook, stirring often, for 10 minutes, or until golden brown. While the onion cooks, whisk the eggs together with the milk, sea salt, and freshly cracked pepper, to taste.
Pour in the egg and onion mixture. Constantly fold the egg mixture from the bottom of the pan to the top. This will keep it from overcooking and the middle section will stay soft and fluffy. Do this constantly for 1 or 2 minutes, or until the eggs are cooked to your liking. Sprinkle with chives and serve immediately. Enjoy.
