Blueberry and Cherry Oatmeal Cookies with White Chocolate Chips
I found a recipe on MyRecipe that looked too good to resist. I adapted the recipe to work with what I had on hand. These cookies were a huge hit with my kids and an even bigger hit with my husband… he LOVED them. I loved the combination of chewy oatmeal cookies with tart blueberries and cherries and the sweet white chocolate chips. These tasty treats were super simple to make and my whole family loved them… you can’t beat that!
How to Make Blueberry and Cherry Oatmeal Cookies with White Chocolate Chips
Preheat the oven to 350 degrees. Line a baking sheet with a silpat mat.
Combine the flour, oats, baking soda, and salt together in a bowl, mix thoroughly.
In another bowl, beat together with a mixer the butter and brown sugar until creamy. Add the egg and vanilla; beat well. Gradually add the flour mixture to the egg mixture and mix until combined. Add the blueberries and cherries and most of the white chocolate chips to the batter and gently mix.
Drop dough by the tablespoon onto the baking sheet 2 inches apart. Push a few of the remaining white chocolate chips into the top of each dough ball. Place into the oven and bake for 12 minutes or until golden brown. Let the cookies sit on the baking sheet for 1-2 minutes before moving to a rack to cool completely. Enjoy.
