Shredded Beef, Caramelized Onion, and Cotija Cheese Baked Flautas

We had friends over for dinner, and I made my shredded beef soft tacos because my friend loves shredded beef. We had leftover meat, so the following day I made this shredded beef, caramelized onion, and cotija cheese baked flautas recipe for dinner, and they turned out delicious! You can’t go wrong with shredded beef and caramelized onions! This baked beef flautas recipe was a great way to use up leftover shredded beef and paired nicely with some charro beans and cilantro and lime rice on the side. We all loved these flautas served with salsa, hot sauce, guacamole, and sour cream for dipping.
Shredded Beef, Caramelized Onion, and Cotija Cheese Baked Flautas
Ingredients:
- 1 tbsp butter or olive oil
- 1 yellow onion, sliced
- Sea salt and freshly cracked pepper, to taste
- Shredded beef, click the link for the recipe, well drained
- Cotija cheese, crumbled
- Small flour tortillas

How to Make Shredded Beef, Caramelized Onion, and Cotija Cheese Baked Flautas:
Prepare the shredded beef. Click this link for the recipe.
Preheat the oven to 375 degrees. Line a baking sheet with foil, then place a wire cooling rack on top of the baking sheet. Side Note: Using the cooling rack helps prevent the flautas from getting soggy from the liquid in the beef while baking.
Heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes, or until tender and caramelized. Season with sea salt and freshly cracked pepper, to taste. Side Note: Add a little water if the onions get dry while cooking to prevent burning.
Heat the flour tortillas in the microwave for 20-30 seconds, until pliable.
Place a bit of caramelized onions in the center of the tortilla first, then add some shredded beef (make sure to drain the juice from the shredded beef) on top, followed by a sprinkling of cotija cheese; roll.
Place, seam side down, on the cooling rack on top of the baking sheet. Finish rolling the remaining flautas, then spray the top of each of them with olive oil cooking spray.

Place in the oven and bake for 8-10 minutes.
Flip over and cook for an additional 5-6 minutes or until crispy and golden brown.
Serve the baked flautas immediately with salsa, hot sauce, guacamole, and sour cream for dipping, if desired. Enjoy.
