Mixed Greens with Strawberries, Extra Sharp White Cheddar, and Candied Pecans with a Strawberry Balsamic Vinaigrette

I created this recipe for mixed greens, strawberries, extra-sharp white cheddar, and candied pecans with a strawberry balsamic vinaigrette to take to a friend’s house for dinner. I served the salad with a homemade strawberry balsamic vinaigrette, and it tasted fantastic with the barbecue chicken and potato salad my friend served.

Ingredients:

  • 4 cups of mixed greens
  • 4 cups of romaine lettuce, chopped
  • 4 oz of fresh strawberries, hulled & sliced
  • ½ cucumber, seeded and diced
  • Extra-sharp white cheddar, shaved (I used a carrot peeler)
  • Candied pecans
  • Sea salt and freshly cracked pepper, to taste

How to Make a Mixed Greens with Strawberries, Extra Sharp White Cheddar, and Candied Pecans with a Strawberry Balsamic Vinaigrette

Prepare the strawberry balsamic vinaigrette. Click here for the recipe.

Place the mixed greens and romaine lettuce into a large serving bowl.

Add the sliced strawberries and diced cucumber, along with the candied pecans and extra-sharp cheddar shavings. Season with sea salt and freshly cracked pepper, to taste.

Serve the salad with the vinaigrette drizzled on top. Enjoy.
