Lemon-Mustard Chicken Drumsticks
I wanted simple comfort food for dinner last night, and since my kids love chicken drumsticks I decided to bake these lemon-mustard chicken drumsticks. The chicken smelled wonderful while they baked and tasted fantastic. We spooned some of the sauce on top before eating and all agreed it was TASTY! The chicken paired nicely with the Parmesan and Panko Roasted Baby Potatoes.
How to Make Lemon-Mustard Chicken Drumsticks
Combine the Dijon mustard, lemon zest, lemon juice, olive oil, minced garlic, fresh thyme, and honey together in a small bowl.
Slather the drumsticks evenly with the marinade then season both sides well with sea salt and freshly cracked pepper, to taste then place into a baking dish that has been coated with cooking spray. Place into the refrigerator to marinate for 2 hours.
Remove from the refrigerator 20 minutes before baking.
Preheat the oven to 400 degrees.
Place the chicken into the oven and bake for 40 minutes or until the chicken is cooked through. Side Note: If the chicken skin is not browned to your liking, turn the oven to broil and cook, WATCHING VERY CAREFULLY, until it’s golden brown. Let the chicken rest for 5 minutes before serving. Enjoy.

Pam, I LOVE this recipe. It seems like it would be so so easy to whip up on a busy week-night. Love the lemon, honey, mustard and thyme combo. I’ll be trying this one for sure!
