I wanted a fresh salad to pair with the Lemon-Mustard Chicken Drumsticks and the Parmesan and Panko Roasted Baby Potatoes. After looking around, I grabbed some mixed greens, strawberries, blueberries, and feta from the refrigerator along with Fran’s Vinaigrette. Thankfully, I also found an avocado and some sliced almonds which made the salad extra special. This salad not only looked beautiful, but it tasted fresh and so delicious. I loved the sweet berries with the salty feta and crunchy almonds with the tangy vinaigrette. My family gobbled up every single bite of this salad and I’ll definitely be making it again–soon.

How to Make a Mixed Greens with Berries, Feta, Avocado, and Almonds

Make Fran’s Vinaigrette – click here for the link. Set aside to allow flavors to mingle.

Combine the mixed greens in a salad bowl. Top with strawberries, blueberries, feta cheese, diced avocado, and sliced almonds; season with freshly cracked black pepper. Drizzle with the vinaigrette, to taste. Toss to coat evenly then serve immediately. Enjoy.

  • Strawberries sliced

  • ½ avocado diced
  • Sliced almonds
