Fresh Herb and Feta-Crusted Salmon

We all love salmon and I usually make our standard salmon with garlic, lemon, and dill but decided to do something different this time and made this fresh herb and feta-crusted salmon recipe. I cooked it until medium rare and it was juicy, tender, healthy, and flavorful. We all loved this baked salmon recipe and thought it paired nicely with Roasted Tomatoes with Pesto and Parmesan, and Garlic Rice.

Fresh Herb and Feta-Crusted Salmon

Ingredients:

1 lb salmon fillet
1 large clove of garlic, minced
Juice from 1 small lemon
Sea salt and freshly cracked pepper, to taste
2 tbsp fresh dill, chopped
2 tbsp fresh parsley, chopped
2 tbsp feta cheese
Lemon wedges for serving

How to Make Fresh Herb and Feta-Crusted Salmon

Preheat the oven to 425 degrees. Line a baking sheet with parchment paper or foil (for easier cleanup) then coat it with cooking spray.

Rub the minced garlic all over the salmon then squeeze the juice of a small lemon all over. Season with sea salt and freshly cracked pepper, to taste.  Sprinkle the top with some chopped parsley, fresh dill, and feta cheese.

Fresh Herb and Feta-Crusted Salmon

Place into the oven to bake for 13-15 minutes or until the salmon flakes easily with a fork and is medium-rare. Don’t overcook!

Remove from the oven and serve with additional slices of lemon if desired. Serve immediately.  Enjoy.
