Roasted Tomatoes with Pesto and Parmesan

Roasted tomatoes are always a hit in my house and are my kids’ most requested veggie side dish. I decided to do something different and made these easy roasted tomatoes with pesto and parmesan to pair with flank steak and parmesan roasted potatoes. My whole family loved these tasty roasted tomatoes and thought they paired well with the rest of the meal.

Roasted Tomatoes with Pesto and Parmesan

Ingredients:

  • Olive oil cooking spray
  • 5 small tomatoes, halved
  • Freshly cracked black pepper, to taste
  • Pesto, to taste
  • Parmesan cheese, shredded
  • Fresh basil, chopped

How to Make Roasted Tomatoes with Pesto and Parmesan

Preheat the oven to 400 degrees. Line a baking sheet with parchment or foil then coat with olive oil cooking spray.

Prepare pesto–click here for the recipe.

Place the tomato halves on the baking sheet then season the tomatoes with freshly cracked black pepper, to taste.

Place a bit of pesto on each tomato half followed by a pinch of shredded Parmesan cheese.

Roasted Tomatoes with Pesto and Parmesan

Place into the oven and roast for 10-12 minutes or until the tomatoes are softened and the cheese is melted.

Remove from the oven and add some more Parmesan cheese and a bit of fresh basil to the top of each tomato half. Serve immediately. Enjoy.

  1. I have the opposite problem in my house! The.boy is just NOT into roasted tomatoes and I have to pressure him into eating them. Not that that will stop me from trying these beauties!
