Pita Pizza with Spinach, Mushrooms, Onions, and Fresh Tomatoes

This is such a quick and easy lunch or dinner to prepare when you don’t have time to make homemade pizza dough. I love that these mini pizzas are the perfect size for one person! You can use any ingredients you prefer but I decided to go vegetarian on this pizza. I used leftover marinara sauce then added shredded mozzarella, some sautéed mushrooms and spinach with garlic, and raw onions (you can sauté the onions with the mushrooms but I like the flavor of raw onions on pizza). These pita pizzas take less than 10 minutes to bake and turn out crisp on the bottom and so full of flavor. I love adding fresh tomato slices to the top of my pizzas – they look pretty & they taste great.

How to Make a Pita Pizza with Spinach, Mushrooms, Onions, and Fresh Tomatoes

Preheat the oven to 400 degrees. Coat a baking sheet with a bit of cooking oil.

Heat the olive oil in a small skillet over medium heat. Add the mushrooms and cook, stirring occasionally, for 3-4 minutes. Add the spinach, crushed red pepper flakes, sea salt & freshly cracked pepper, to taste, and minced garlic. Cook, stirring constantly, for 1 minute. Remove from the heat.

Spread desired amount of marinara on top of the pita then sprinkle with mozzarella cheese. Spread the sautéed mushrooms and spinach evenly over the pizza. Add the raw onion slices. Place into the oven and bake for 8-10 minutes. Remove from the oven and top with fresh tomato slices. Slice & serve immediately. Enjoy.

Yield: 1 mini pizza

Total Time: 8-10 minutes

Ingredients:

1 tsp olive oil
Handful of button mushrooms, sliced
1 cup baby spinach
Pinch of crushed red pepper flakes
Sea salt and freshly cracked pepper, to taste
1 clove of garlic, minced
1 whole wheat pita
Marinara sauce, to taste
Mozzarella cheese, to taste
Sweet yellow onion, sliced thinly, to taste
Fresh tomato, sliced
