Pita Pizza with Spinach, Mushrooms, Onions, and Fresh Tomatoes
This easy pita pizza with spinach, mushrooms, onions, and fresh tomatoes recipe is a quick and tasty lunch or dinner to prepare when you don’t have time to make homemade pizza dough. I topped this pita pizza with shredded mozzarella, some sautéed mushrooms and spinach with garlic, and a few slices of raw onions, and used leftover marinara sauce for the sauce. This pita pizza took less than 10 minutes to bake and was crisp on the bottom and full of flavor. Lastly, I added fresh tomato slices to the top of my pizzas–they look pretty & taste great.
Pita Pizza with Spinach, Mushrooms, Onions, and Fresh Tomatoes
Ingredients:
- 1 tbsp olive oil
- Handful of button mushrooms, sliced
- 1 cup baby spinach
- Pinch of crushed red pepper flakes
- Sea salt and freshly cracked pepper, to taste
- 1 clove of garlic, minced
- 1 whole wheat pita
- Marinara sauce (or pizza sauce), to taste
- Mozzarella cheese, to taste
- Sweet yellow onion, sliced thinly, to taste
- Fresh tomato, sliced
How to Make a Pita Pizza with Spinach, Mushrooms, Onions, and Fresh Tomatoes
Preheat the oven to 400 degrees. Coat a baking sheet with a bit of cooking oil.
Heat the olive oil in a small skillet over medium heat. Add the mushrooms and cook, stirring occasionally, for 3-4 minutes. Add the spinach, crushed red pepper flakes, sea salt & freshly cracked pepper, to taste, and minced garlic. Cook, stirring constantly, for 1 minute. Remove from the heat.
Spread the desired amount of marinara on top of the pita then sprinkle with mozzarella cheese. Spread the sautéed mushrooms and spinach evenly over the pizza. Add the raw onion slices.
Place into the oven and bake for 8-10 minutes, until golden brown and the cheese is melted.
Remove from the oven and top with fresh tomato slices. Slice & serve immediately. Enjoy.

Very quick and wholesome meal! I love using pita when making a ” last minute” pizza!
I use flatbread a lot to make pizza too. This is so yum with fresh tomatoes.

We like to use Naan as pizza crust but never tried pita – we’ll have to change that. Looks healthy and delicious.
