Peach Salsa
I was in the mood for Mexican food for dinner. My regular go-to salsa is smokey tomato chipotle salsa that I pair with a lot of our Mexican meals. Today was hot and I was in the mood for more of a summer salsa. My local farmer’s market had fresh beautiful peaches on sale, so I decided to make peach salsa. It was so pretty and delicious! We all enjoyed this fresh and tasty salsa, especially my daughter who nearly ate the entire bowl by herself.
How to Make Peach Salsa
Finely dice the peaches, red onion, jalapeno, grape tomato, and cilantro. Place them all in a small bowl. Add the minced garlic and lime juice. Stir the salsa until well combined then cover and place in the refrigerator to allow flavors to mingle for 15-20 minutes.
Remove from the refrigerator and season with sea salt and freshly cracked pepper, to taste; add more lime juice if needed. Stir to combine and serve with chips or on tacos, enchiladas, tamales, etc. Enjoy.

- 2 large ripe but not mushy peaches, peeled and finely diced
- 2 tbsp red onion finely diced
- ½ jalapeno seeded and finely diced
- 2-3 grape tomatoes seeded and finely diced
- 2 tbsp fresh cilantro finely chopped
- 1 small clove of garlic minced
- Lime juice to taste

That’s a creative use for peaches! I doubt any would have lasted long enough to become anything in my house!
