Shaved Kale & Brussels Sprout Salad with Apple, Cheddar, Pecans & Balsamic Vinaigrette
I recently made this shaved kale & brussels sprout salad with apple, cheddar, pecans & balsamic vinaigrette recipe and it was fantastic! I loved the crunch from the combination of kale, brussels sprouts, cabbage, and apples along with the sweetness from the sugared pecans and the creamy sharp cheddar cheese combined with the tangy vinaigrette. This salad has a perfect combination of flavors and it paired nicely with herb pork chops and rice pilaf.
Shaved Kale & Brussels Sprout Salad with Apple, Cheddar, Pecans & Balsamic Vinaigrette
White Balsamic Vinaigrette:
- 2 tbsp canola oil
- 2 tbsp olive oil
- 4 tbsp white balsamic vinegar ***use less if you prefer less tangy dressing
- 1 clove of garlic, minced
- Pinch of sugar, to taste
- Sea salt and freshly cracked pepper, to taste
Salad:
- 10 oz bag of shaved kale, brussels sprouts, and cabbage
- Pomegranate arils
- Green apple diced
- Sharp white cheddar diced
- Sugared pecans
How to make a Shaved Kale & Brussels Sprout Salad with Apple, Cheddar, Pecans & Balsamic Vinaigrette
Combine the vegetable oil, olive oil, white balsamic vinegar, minced garlic, sugar, sea salt, and freshly cracked pepper, to taste. Mix until well combined. Side Note: We prefer a tangier vinaigrette which is why I do equal parts oil and vinegar. If you prefer a less tangy vinaigrette, use half the vinegar.
Combine the shaved kale, Brussels sprouts, and cabbage in a bowl. Top with the pomegranate seeds. green apple, sharp cheddar, and sugared pecans.
Drizzle the white balsamic vinaigrette, to taste. Serve and enjoy.
