Cinnamon Honey Butter Roasted Acorn Squash Rings
I’ve been thinking about making this recipe for a long time and I am so glad I veered from my regular acorn squash recipe and tried it! I am a big fan of honey butter and I love acorn squash, so I decided to combine them by roasting slices of the squash slathered in some of the cinnamon honey butter then drizzled the roasted squash with the remaining melted cinnamon honey butter right before serving. My kids and I thought these roasted acorn squash rings were absolutely delicious. Perfect for a Thanksgiving side dish!
How to Make Cinnamon Honey Butter Roasted Acorn Squash Rings
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
Using a sharp chef’s knife, cut the ends off the acorn squash then slice into rings. Cut the seeds and membrane out of each ring. Place onto the prepared baking sheet.
Combine the softened butter with honey, cinnamon, and salt; mix until well combined and creamy.
Brush just a little bit of cinnamon honey butter on the bottom of the rings then return to the baking sheet. Brush more of the cinnamon honey butter on the top and insides of the rings; reserving some of the honey butter for later use.
Place the squash into the oven and roast for 20-25 minutes, or until tender. Remove from the oven.
Place the remaining honey butter into the microwave for a few seconds until melted. Drizzle the melted honey butter over the squash rings. Serve immediately. Enjoy.

- 1 acorn squash cut into rings, seeds and membranes discarded
- 2 tbsp salted butter softened to room temperature
- 3-4 tsp honey to taste (more or less depending on desired sweetness)
- ¼ tsp cinnamon
- Pinch of salt
