Kalamata Olive and Feta Vinaigrette
I made parmesan chicken and creamy mashed potatoes for dinner and I wanted a Greek flavored salad to pair with them. I found a wonderful-looking kalamata olive and feta vinaigrette on Closet Cooking that looked delicious, and since I trust Kevin’s recipes, I decided to make it. Since the vinaigrette has such strong flavors, I decided to serve it on a simple salad of baby spinach, tomatoes, cucumber, red onion, and pine nuts. Thankfully, I made the vinaigrette in the afternoon so it had time for the flavors to mingle and it was SO delicious! It tasted fantastic on the salad and it also tasted great with the chicken. We all enjoyed this tangy and delicious vinaigrette–especially me. I enjoyed some of it the next day on my salad for lunch and it was even more flavorful. YUM! Guess what’s going on my salad tonight?
How to Make Kalamata Olive and Feta Vinaigrette
Combine the olive oil, canola oil, red wine vinegar, kalamata olives, feta cheese, shallot, Dijon, garlic, honey, oregano, crushed red pepper flakes, sea salt, and freshly cracked pepper, to taste together in a jar. Whisk until well combined. Cover with a lid and set aside to allow flavors to mingle until ready to serve.
Ingredients
- 2 tbsp Olive oil
- 1 tbsp Canola oil
- 3 tbsp red wine vinegar
- 3 tbsp kalamata olives finely chopped
- 3 tbsp feta cheese
- 1 tbsp shallot finely diced
- 1 tbsp Dijon mustard
- 1 clove of garlic grated
- 2-3 tsp honey to taste
- ½ tsp oregano
- Pinch of crushed red pepper flakes
- Sea salt and freshly cracked pepper to taste
Instructions

I would love this but my husband would not even touch it if he knew it had feta in it 🙁 Have a good week Diane
I love about anything with Feta in it and sure I’d like this dressing – will try soon. I notice there is mustard and honey in the photo but not mentioned in the ingredients list.

When we had our summer home in Maine, a restaurant there told us how they made their Greek dressing which I make but without honey and olives. Can’t wait to give this version a try…it sounds great.
