Kalamata Olive and Feta Vinaigrette
I made Parmesan chicken and creamy mashed potatoes for dinner, and I wanted a Greek-flavored salad to pair with them. I found an easy kalamata olive and feta vinaigrette recipe on Closet Cooking that looked delicious, and since I trust Kevin’s recipes, I decided to make it. Since the vinaigrette has such strong flavors, I decided to serve it on a simple salad of baby spinach, tomatoes, cucumber, red onion, and pine nuts. We all enjoyed this easy Green vinaigrette recipe on the salad, and it also tasted great with the chicken.
Kalamata Olive and Feta Vinaigrette
Ingredients:
- 2 tbsp olive oil
- 1 tbsp vegetable oil
- 3 tbsp red wine vinegar
- 3 tbsp kalamata olives, finely chopped
- 3 tbsp feta cheese, crumbled
- 1 tbsp shallot, finely diced
- 1 tbsp Dijon mustard
- 1 clove of garlic, grated
- 2-3 tsp honey, to taste
- ½ tsp oregano
- Pinch of crushed red pepper flakes
- Sea salt and freshly cracked pepper, to taste

How to Make Kalamata Olive and Feta Vinaigrette
Combine the olive oil, vegetable oil, red wine vinegar, kalamata olives, feta cheese, shallot, Dijon, garlic, honey, oregano, crushed red pepper flakes, sea salt, and freshly cracked pepper to taste in a small glass jar. Whisk until well combined.
Cover with a lid and set aside to allow flavors to mingle until ready to serve.

I would love this but my husband would not even touch it if he knew it had feta in it 🙁 Have a good week Diane
I love about anything with Feta in it and sure I’d like this dressing – will try soon. I notice there is mustard and honey in the photo but not mentioned in the ingredients list.

When we had our summer home in Maine, a restaurant there told us how they made their Greek dressing which I make but without honey and olives. Can’t wait to give this version a try…it sounds great.
