Chocolate Cupcakes with Peanut Butter Frosting
We were heading to a friend’s house for dinner and I was asked to bring a dessert. I know the hostess loves chocolate/peanut butter combined so I made these tasty chocolate cupcakes with peanut butter frosting from a recipe I found on Lighting the Pilot. These cupcakes were very simple to make and the frosting was beyond decadent and delicious. The kids absolutely loved these cupcakes and deemed them AMAZING and definitely blog-worthy. The adults did not try them because we were all too stuffed from our delicious dinner. I have a feeling the kids were very happy about that because they all got a cupcake as their school lunch treat the following day.
How to Make Chocolate Cupcakes with Peanut Butter Frosting
Preheat the oven to 350 degrees. Line a muffin tin with cupcake liners.
Make the cupcakes by combining the flour, cocoa powder, baking powder, baking soda, and salt together; mix well.
Beat the brown sugar, white sugar, and oil together with a hand mixer, until creamy and smooth. Add the eggs one at a time then vanilla; continue to beat until well combined.
Next, pour 1/3 of the dry ingredients into the egg mixture, followed by 1/2 of the buttermilk, then 1/3 of the dry followed by the rest of the buttermilk, and finally the rest of the dry mix. Stir with a rubber spatula, scraping the sides of the bowl, until just combined. Don’t over mix.
Pour the cupcake batter into the cupcake liners evenly.
Place into the oven and bake for 16-19 minutes, or until a tester inserted in the center comes out clean.
Remove from the oven and allow to cool in the pan for a few minutes before moving them to a wire rack to finish cooling completely.
Make the frosting by beating together the powdered sugar, peanut butter, butter, and milk, to taste, together with a hand mixer until creamy and smooth.
Pipe the frosting onto your cooled cupcakes. Top with some shaved chocolate, if desired. Enjoy!
