Grilled Gruyere & Pastrami on Dark Rye

Grilled Gruyere & Pastrami on Dark Rye

I have had a big craving for a grilled cheese sandwich for weeks and I finally caved and made one for lunch recently. I decided to go a little different route than my normal Havarti and tomato grilled cheese, this time I slathered the bread with mayo on one side and coarse ground Dijon mustard on the other piece before layering them with pastrami and gruyere. Next, I grilled it in a dry skillet to keep it a bit healthier but feel free to slather the outside pieces of bread with butter for a more decadent sandwich. This grilled gruyere & pastrami on dark rye was delicious and oozing with yummy cheese and I loved the combination of it with the dark rye, pastrami, mayo, and mustard–guess what I had the following day for lunch too?

Heat a skillet over medium heat. Spread mayonnaise on one side of a piece of bread. Spread whole grain Dijon mustard on the other piece. Layer the pastrami on the mustard followed by the gruyere then top with other slice mayonnaise side down.

Place the sandwich into the hot skillet and cook for 3-4 minutes on each side or until golden brown and the cheese has melted. Serve immediately. Enjoy.
