Butter Lettuce Salad with Avocado, Cucumber, and Pine Nuts with a Lemon Vinaigrette
Oh, how I loved this butter lettuce salad with avocado, cucumber, and pine nuts with a lemon vinaigrette! Butter lettuce is so light and delicate but it held up well with the avocado, cucumber, red onion, radish, toasted pine nuts, and shaved parmesan cheese. I tossed this light salad with a homemade tangy lemon vinaigrette that paired nicely with the veggies and the rest of the meal. This butter lettuce salad paired nicely with chicken Francese, orzo with roasted vegetables, and some freshly baked bread for a delicious and hearty meal that we all loved.
How to Make a Butter Lettuce Salad with Avocado, Cucumber, and Pine Nuts with a Lemon Vinaigrette
Make the lemon vinaigrette by combining olive oil, lemon juice, minced garlic, honey, a pinch of red pepper flakes, sea salt, and freshly cracked pepper, to taste. Whisk until well combined. Taste and adjust seasoning if needed or desired. Set aside to allow flavors to mingle.
Make the salad by combining the butter lettuce, avocado, cucumber, red onion, radishes, and toasted pine nuts. Drizzle with the well whisked lemon vinaigrette then toss to coat evenly. Top with shaved parmesan and freshly cracked black pepper, to taste. Serve immediately and enjoy.
Ingredients
Lemon Vinaigrette:
- ¼ cup olive oil
- 3-4 tbsp fresh lemon juice to taste (we like it tart)
- 1 clove of garlic minced
- Honey to taste
- Pinch of crushed red pepper flakes to taste
- Sea salt and freshly cracked pepper to taste
Salad:
- Butter lettuce torn into bite-sized pieces
- ½ avocado sliced
- ½ cucumber sliced
- ¼ red onion sliced thinly
- 1 radish sliced thinly
- 1 tbsp toasted pine nuts
- Shaved parmesan
- Freshly cracked black pepper to taste
Instructions
- Make the lemon vinaigrette by combining the olive oil, lemon juice, minced garlic, honey, a pinch of red pepper flakes, sea salt, and freshly cracked pepper, to taste. Whisk until well combined. Taste and adjust seasoning if needed or desired.
