Dill Cucumber Salad

Dill Cucumber Salad

I wanted a light and refreshing salad to serve with the salmon I was making for dinner so I threw this dill cucumber salad together. I make this salad often but tried something a little different this time. I salted the cucumber slices then set them in a strainer for 30 minutes prior to preparing the salad. This step allows the liquid to release from the cucumber slices so they will stay nice and crisp when tossed with the vinegar. This dill cucumber salad turned out delicious – we all loved the fresh dill flavor and the crispness of the cucumber.
