Simply Roasted Tomatoes
We love tomatoes in my house and I use them all the time in pasta, salads, and sauces. I think our favorite is simply roasted tomatoes because they are just so delicious and they pair well with most main dishes. My family really loves how sweet the tomatoes become once roasted.
Simply Roasted Tomatoes:
Ingredients:
- 2 large tomatoes (I use vine-ripened)
- 1 clove of garlic, sliced thinly
- Olive oil, to taste
- Sea salt and freshly cracked pepper, to taste
How to Make Simply Roasted Tomatoes
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper or tin foil.
Cut tomatoes in half lengthwise. Gently slide the garlic slices into the soft centers of each tomato. Drizzle each tomato half with a bit of olive oil, salt, and pepper, to taste.
Place into the oven to roast for 35-40 minutes, or until softened.
