Simply Roasted Tomatoes

We love tomatoes in my house, and I use them all the time in pasta, salads, and sauces. One of our favorite ways to cook them is roasting them because they become sweet and more intensely flavored. This simple roasted tomato recipe is always a hit with all of us, and pairs well with juicy steak, mashed potato casserole, a simple salad, and buttery dinner rolls.
Simply Roasted Tomatoes
Ingredients:
- 2 large tomatoes (I use vine-ripened)
- 1 clove of garlic, sliced thinly
- Olive oil, to taste
- Sea salt and freshly cracked pepper, to taste
How to Make Simply Roasted Tomatoes:
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper or foil.
Cut tomatoes in half lengthwise. Gently slide the garlic slices into the soft centers of each tomato. Drizzle each tomato half with a bit of olive oil, salt, and pepper, to taste.
Place into the oven to roast for 35-40 minutes, or until softened.
