Mint Chocolate Pixies

My son and I decided to make some mint chocolate pixies since it was cold and rainy outside today. These tasty cookies were super simple and fun to make and they made the house smell fantastic. My son loved them and my daughter told me they are her new VERY favorite cookie EVER. I must say, they turned out moist, minty, and so delicious.

Mint Chocolate Pixies:

Ingredients:

  • 4 (1 oz) squares of UNSWEETENED chocolate
  • 1/4 cup of unsalted butter
  • 4 large eggs
  • 2 cups of white sugar
  • 2 tsp of vanilla extract
  • 2 tsp of peppermint extract
  • 2 cups of flour
  • 2 tsp of baking powder
  • 1/2 tsp of salt
  • 1/4 cup of powdered sugar

How to Make Mint Chocolate Pixies

Melt the butter and chocolate in a large glass bowl in the microwave.

Add eggs, one at a time, beating at medium speed with a hand mixer.

Gradually add the sugar, vanilla, and mint extract.

Combine flour, baking powder, and salt in a bowl–mix thoroughly.

Slowly add the flour mixture into the chocolate mixture beating at low speed until well blended.

Cover and chill in the refrigerator for 2 hours.

Preheat the oven to 300 degrees.

Shape the dough into small balls and roll in powdered sugar then place the balls on a silpat-covered baking sheet.

Mint Chocolate Pixies

Bake for 16-18 minutes.

Remove from the oven and let cool on a rack. Enjoy.

  1. Oh. I die. Im totally freakishly into everything with mint. and mint/chocolate? Mm. I die times two.
    My only 'hmm?' is what powdered sugar is. I wonder if its possible to even buy here in Sweden. And the peppermint extract, is that something you buy in a normal grocery store? Feels like it might be harder to get in Stockholm. But I will give it a try to find. Wanna.eat.minty.cookies!
